Type of Grease Traps

Hydromechanical Grease Trap (HGT)

This is passive grease interceptor that’s installed directly under the sink and can handle multiple gallons of wastewater per minute.  Wastewater enters through the drain, an internal baffle separates water from waste. Fats, oils, and grease (FOG) rises to the top. Anything hard sinks to the bottom. Water passes through, while everything else is separated to be disposed of. It’s got a low upfront cost to install and it’s easy to maintain on a weekly or monthly basis, but it has a smaller capacity and doesn’t work well for high-volume kitchens. Hydromechanical grease traps are ideal for small kitchens.

Gravity Grease Interceptor (GGI)

This is an outdoor grease trap, often a large underground tank holding up to 2,500 gallons, that is installed before the sewer connection to ensure it catches all the waste. The primayr benefits are the massive capacity and the duration of use before it needs to be emptied. FOG will float to the top, and anything solid will settle to the bottom. Water is controlled with baffles and multiple chambers. Downsides include the large installation cost and excavation required to install it. Gravity grease interceptors are ideal for standard restaurants.


Automatic Grease Removal Unit (AGRU)

Automatic grease removal units intercept grease mechanically using heating and skimming mechanisms. The heating element inside the unit liquefies the fats, oils, and grease, which then flows into a skimmer that pulls it into a separate collection container. This type of grease trap requires less pumping because of its active removal ability, but there is a high installation cost, it requires occasional part maintenance, and it needs electricity to run. AGRU’s are the perfect grease management solution for high-volume kitchens.

Solids Interceptor

A pre-interceptor is a tank installed before the grease interceptor that collects any food pieces before they enter the grease trap. It’s cheap to install and it protects the main trap by reducing maintenance costs. Solids interceptors can and should be used be all kitchens because they extend the working life of the primart grease removal system.

Grease Recovery Device

This is a mini, eco-friendly version of the AGRU that separates grease into a separate container for recycling purposes.
